Maple & Rye began with a wild yeast starter and a commitment to slow-fermented artisan sourdough, built to serve our local neighborhood with fresh morning bakes.

Founded in 2020

Started in a Home Kitchen

In 2020, our husband-and-wife team began baking slow-fermented sourdough from our home kitchen. We perfected each loaf through quiet daily practice before opening our storefront for scheduled local pickups.

We partner directly with regional grain growers, choosing unbleached stone-ground flours to achieve rich crumb texture, dark caramel crusts, and natural digestibility in every batch.

The 36-Hour Sourdough Process

Levain Cultivation

We feed our heritage sourdough culture daily using unrefined regional grains.

Gentle Mixing

Stone-ground flour and water rest during autolyse before fine sea salt is folded in by hand.

36-Hour Cold Proof

Shaped loaves ferment slowly in wicker baskets overnight to unlock deep flavors.

Hearth Deck Bake

Loaves are hand-scored and baked on hot stone decks until crusts turn golden caramel.
